Luscious pineapple pieces are placed for many hours in specially designed solar driers. When dried, they taste of all they are - pineapple and sunshine.
Jane Naluwairo, one of the major producers of sun-dried pineapple, working closely with 'Fruits of the Nile' (the originator of sun driers in Uganda), says: "I mobilised some women in a Tukolelere Wamu Women's Association and took on fruit drying. I sold a sewing machine, previously my only income source, and put the money into solar drying. Now I do not regret anything."
