Goji berries

Goji berries and almond cake

Ingredients
150g butter
150g caster sugar
3 eggs
150g self-raising flour
50g ground almonds
few drops almond essence
100g goji berries.
¼ pint warm water 

Method
1) Soak goji berries in warm water for about 5 minutes. Strain off the liquid leave about a table spoon in bowl with the berries to add to the cake.
2) Cream butter and sugar.
3) Add eggs little at a time beating well.
4) Fold in flour and ground almonds
5) Add goji berries and almond essence and stir till well mixed.
6) Place in greased and lined pound loaf tin.
7) Bake in oven set at 160*c gas mark3 for approx 1 hour. When cooked turn out onto cooling rack.
 When cold enjoy!




Goji berry smoothie

Ingredients:
1 cup of goji berries (previously soaked in warm water)
250g raspberries
1 banana

Method:
1)Soak goji berries in warm water for about 5 minutes.

2)Blend all until smooth
Enjoy!



Goji berry salad

Ingredients:
3 diced apples
1 segmented orange
1 handful goji berries
lemon juice

Method:
Mix the diced apples, the segmented orange and the goji berries. Add some lemon juice and leave in the fridge for 1/2h until the gojis absorb the fruits juice before serving.
